How did soju, known as the most popular drink that represents traditional Korean alcohol, come into being? Introduced from Mongolia to Korea during the Goryeo Dynasty, soju became more popular during the Joseon Dynasty. Traditionally, soju is distilled from fermented grains like rice, wheat, or barley, but more modern production methods have expanded to include other ingredients such as sweet potatoes, tapioca, and even fruits. This is where Jinju comes in!
Jinju starts by harvesting the finest Chardonnay grapes in Napa Valley.
Following the distillation methods from the traditional process for soju, fermenting the grapes, distilling it 3 times to remove impurities and color, resulting in a crisp, clean soju spirit with a smooth taste. Unlike the traditional ingredients used in soju, Jinju uses white grapes that goes through a 3x distillation process to create a slightly sweet citrus flavor without any artificial additives!
Adding to soju’s neutral flavor and a clean finish, Jinju adds a brighter acidity with its light liquid essence extracted from the white grapes to add a hint of citrus. We carry 38% and 23% ABV options to fit your taste!
